To Make These Almond Pancakes You'll Need:
- 112 grams Almond Flour - of course! It gives these almond pancakes their delicious fluffy texture
- 2 Eggs - to bind everything together
- 80 millilitres of Unsweetened Almond Milk - to add moisture to the almond pancakes
- 30 millilitres of Coconut Oil (softened)
- 5 grams Baking Powder
- ½ tsp Cinnamon
- ½ tsp Sea Salt
- ½ cup Blueberries/Raspberries
- ½ cup Unsweetened Coconut Yogurt
Directions:
Step 1
To make your almond pancakes, in a medium-sized bowl, whisk together the almond flour, baking powder, eggs, almond milk, coconut oil, cinnamon and sea salt.
Step 2
Heat a non-stick pan over medium-low heat. Pour the batter into the pan, no more than 1/4 cup at a time. Cook each side for 3-4 minutes or until browned.
Step 3
Divide the almond pancakes onto plates and top with yoghurt, blueberries and pistachios. Enjoy!
Notes About This Almond Pancake Recipe:
- Leftovers: Refrigerate cooked almond pancakes in an airtight container for up to three days. Reheat in a toaster for easy leftovers.
- Serving size: One serving equals approximately 2 to 3 small almond pancakes.
- Toppings: Top your almond pancakes with yoghurt and berries, almond butter, maple syrup and bacon!
