Forget boring diet food – our nutritionist Wendy Hill is sharing her top recipe to keep your body energized and satisfied all morning.
Naturopathic Nutritionist and host of the Fab Female Nutrition podcast, Wendy Hill shares with us an incredible recipe for Almond Pancakes that come packed with protein, healthy fats, fibre, and essential vitamins, these pancakes are a nutritional powerhouse disguised as a delightful breakfast treat.

Almond Pancake Recipe
- 112 grams Almond
- 5 grams Flour Baking Powder
- 2 Eggs
- 80 millilitres of Unsweetened Almond Milk
- 30 millilitres of Coconut Oil (softened)
- ½ tsp Cinnamon
- ½ tsp Sea Salt
- ½ cup Blueberries
- ½ cup Unsweetened Coconut Yogurt
Directions:
- In a medium-sized bowl, whisk together the almond flour, baking powder, eggs,
- almond milk, coconut oil, cinnamon and sea salt
- Heat a non-stick pan over medium-low heat. Pour the batter into the pan, no
- more than 1/4 cup at a time. Cook each side for 3 to 4 minutes or until
- browned
- Divide the pancakes onto plates and top with yoghurt, blueberries and
- pistachios. Enjoy!
Notes:
- Leftover: Refrigerate cooked pancakes in an airtight container for up to three days. Reheat in a toaster for easy leftovers
- Serving size: One serving equals approximately 2 to 3 small pancakes
- Toppings: Top with yoghurt and berries, almond butter, maple syrup and bacon
