Clean Green Bread Ingredients

  • 200g Fresh Spinach
  • 2 Medium Size Red Onions
  • 5 Cloves Garlic
  • 5 Dried Apricots
  • 2 Medium Eggs
  • 120ml Almond (Or Other Plant Milk)
  • 5 Heaped Tbsp Ground Buckwheat Flour
  • 3 Heaped Tbsp Whole Flaxseeds
  • 2 Heaped Tbsp Walnut Pieces
  • 1 Tbsp Dried Egg White Powder
  • ½ Teaspoon Pink Himalayan Salt
  • 1 Tsp Sage
  • 1 Tsp Rosemary, 
  • 1 Tsp Thyme
  • 1 Tsp Chilli Flakes

Directions

Step 1

Prior to mixing any of the ingredients for the bread, pre-heat oven to 190 degreesWash your spinach and pat it dry. Add half the spinach to a food processor and pulse until chopped. Scrape down the sides, then add the remaining spinach and pulse until finely chopped.

Step 2

Peel the onions and garlic. Chop the dried apricots and onions into chunks, then add them to a processor with the garlic and blend. Crack both eggs into the mixture, add the almond milk, and blend again.

Step 3

Add all the dry ingredients, except for the whole flaxseeds and walnut pieces, and blend together. Remove the blade, add whole flaxseeds and walnut pieces, and stir with a spoon. If the mixture is too sloppy, add another tablespoon of buckwheat flour. If it is too firm, add a little more almond milk.

Step 4

Add the processed mix to a baking paper-lined bread loaf dish. Bake the bread for 30 mins – check at 20 mins with a knife. Ready when the knife comes out clean. Place the bread on a cooling tray to let air get underneath as it adds some firmness.

Step 5

Cut the bread into slices, eat and enjoy! Delicious as a snack on its own or: 

  • you can top the bread up with soft goat cheese salad
  • enjoy it as a brunch with poached eggs/tuna
  • dunk the bread into your favourite soup!

For Vegetarian and Vegan version of this clean green bread recipe just replace eggs with a vegan alternative, i.e ‘Orgran No Egg replacer’, or ‘Oggs – whole egg alternative’, or soaked chia seeds (binder) and baking soda.
